Paella-Style Dirty Rice

Ready in 50 minutes

Ingredients
350g long-grain rice
2 tbsp ground cumin
2 litres vegetable stock, hot
1 tbsp vegetable oil
1 onion, sliced
2 garlic cloves, crushed
3 celery sticks, chopped
2 x 400g cans kidney beans in water, drained and rinsed
Small handful chopped fresh coriander
2 handfuls baby spinach
150g okra, blanched
1 tbsp chopped fresh thyme
Pinch of smoked paprika

Chicken, Broad Bean and Chorizo Rice

Ready in 1 hour

Ingredients
2 tbsp olive oil
6 boneless chicken thighs, halved
100g chorizo, diced
2 medium onions, chopped
3 garlic cloves, chopped
1 green pepper, sliced
200g paella rice
Pinch of saffron (optional)
100ml white wine
500ml hot stock or water
400g broad beans, blanched and peeled, if you prefer

Sushi Squares

Takes 30 minutes to make, plus cooling and chilling

Ingredients
500g sushi rice
3 tbsp light soy sauce
1 tbsp Japanese rice vinegar (look for the Yukata brand at Waitrose)
1/2 small cucumber, halved lengthways, deseeded and finely chopped
40g pickled Japanese ginger (look for the Yukata brand at Waitrose)
4 sheets nori seaweed (the type used to wrap sushi, from Waitrose)
Wasabi, to serve
