Thai Green Vegetable Curry

Ingredients:

200 g green beans
1 head broccoli
200 g snow peas
1 sweet potato, cubed
1 zucchini, sliced
100 g baby corn
2 green chili peppers, sliced thinly
2 cloves garlic, crushed
1 onion, chopped
165 ml coconut milk
1 bunch coriander, chopped
1 bunch basil, chopped
1 tablespoon freshly minced or grated ginger
1 teaspoon lemongrass, sliced
salt (to taste)
pepper (to taste)

2 boneless skinless chicken breasts (cut into bite-sized pieces)

For the Marinade
2 large garlic cloves, peeled and grated
30 g ginger root, peeled and grated
3 tablespoons soy sauce
salt
freshly ground black pepper

For the Coating
2 tablespoons plain flour
2 tablespoons cornflour
vegetable oil, for deep frying
2 slices lemon, to garnish

1 lb halibut fillets, skin removed (or another white fish fillets of your choice)
10 corn tortillas, warmed
1/4 green cabbage
1/4 cup chopped English cucumbers
1/4 cup chopped white onions
1/2 bunch cilantro, chopped
1 tablespoon olive oil
1 lime, juice of
Salsa
Guacamole
Salt and pepper, to taste
