1 tablespoon fresh lime juice
1 teaspoon finely grated (with a rasp) peeled fresh ginger
1 teaspoon finely grated (with a rasp) garlic

For the buttermilk brine
3 cups buttermilk
1/4 cup kosher salt
2 tablespoons sugar
1 1/2 teaspoons garam masala
1 teaspoon ground coriander
1 teaspoon ground peppercorns
1/2 teaspoon ground ginger
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1 chicken (3 1/2 to 4 pounds), cut into 8 serving pieces Canola oil, for frying 2 cups all-purpose flour 2 teaspoons ground coriander 2 teaspoons garam masala
2 teaspoons ground peppercorns
