Cheesy Tuna, Courgette and Spinach Pasta

Ingredients
350g penne pasta
20g butter, softened
20g plain flour
250ml semi-skimmed milk
100g mature Cheddar, roughly grated
1 large courgette, roughly grated
2 handfuls spinach leaves, washed and
large leaves torn
200g can tuna steak in spring water, drained

Salmon Gnocchi Bake

Takes 20 minutes to make and 15-20 minutes in the oven


Ingredients

500g packet fresh gnocchi
25g butter
1 small leek, washed, trimmed and thickly sliced
200g packet soft cream cheese
2 tbsp tomato purée
1/2-1 tsp dried chilli flakes, to taste
Finely grated zest of 1 lemon
1 tbsp chopped fresh parsley
150g salmon fillet, skinned and diced

Nigiri Sushi

375g Japanese sushi rice
4 tbsp rice wine vinegar
2 tbsp caster sugar
1 tsp salt
75g piece skinned tuna
75g piece skinned salmon fillet
A little wasabi paste
4 tbsp dark soy sauce
1 tbsp mirin
25g Japanese pickled ginger
