Ingredients:

1 cup freshly cooked short-grain rice
3 tablespoons seasoned rice vinegar
2 tablespoons toasted sesame seeds or black sesame seeds

Assorted fillings
1/4 lb fresh small shrimp
1 large ripe mango
1 (7 1/2ounce) can of solid tuna in water
1/2 cup smoked salmon, chopped small
1 small fresh cucumber
wasabi paste

Thai Green Vegetable Curry

Ingredients:

200 g green beans
1 head broccoli
200 g snow peas
1 sweet potato, cubed
1 zucchini, sliced
100 g baby corn
2 green chili peppers, sliced thinly
2 cloves garlic, crushed
1 onion, chopped
165 ml coconut milk
1 bunch coriander, chopped
1 bunch basil, chopped
1 tablespoon freshly minced or grated ginger
1 teaspoon lemongrass, sliced
salt (to taste)
pepper (to taste)

Mushroom Kebab

Ingredients:

12 ounces large white mushrooms, cleaned, cut in 1/2-inch slices
2 medium green peppers, deseeded, cut into 1 1/2-inch squares
2 bunches large green onions, white parts cut in 1/2-inch pieces, chop1/4 cup of the green parts & set aside
4-6 garlic cloves, finely chopped
1/4 cup lite soy sauce
1 tablespoon dark sesame oil
2 tablespoons sesame seeds, toasted, divided
3 tablespoons sugar
1/2 teaspoon black pepper
bamboo skewers, soaked in water for at least an hour
