Summery Spanish-Style Soup

Ready in 30 minutes

Ingredients
1 tbsp olive oil
1 medium onion, chopped
2 medium carrots, sliced
400g can chopped tomatoes
1.5 litres hot vegetable stock
410g can mixed pulses, drained and rinsed
75g small soup pasta shapes
2 savoy cabbage leaves, shredded
Handful flatleaf parsley, roughly chopped
Freshly grated Parmesan, to serve

In northern China, napa (also known as Chinese cabbage) is popular in the winter. It is delicious in soups, dumplings, braises and of course stir-fries. Napa is much sweeter and more tender than green cabbage, resembling Savoy cabbage, which can be substituted.

Ingredients

2 tablespoons canola oil
1/4 cup thinly sliced shallot (1 large)
2 teaspoons minced garlic
4 cups thinly sliced napa cabbage (about 8 ounces)
1 cup thinly sliced carrot (1 large)
Rice Wine-Oyster Sauce (recipe follows)
1 teaspoon sesame oil

1/2 pound firm tofu
1/2 cup coarsely grated carrots
1/2 cup shredded Napa cabbage
2 tablespoons finely chopped red pepper
2 tablespoons finely chopped scallions
2 teaspoons finely minced fresh ginger
1 tablespoon chopped cilantro leaves
1 tablespoon soy sauce
1 tablespoon hoisin sauce
2 teaspoons sesame oil
1 egg, lightly beaten
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Bowl of water, plus additional water for steamer
35 to 40 small wonton wrappers
Non-stick vegetable spray, for the steamer
