Turkish Okra Casserole

Ingredients:

3/4 lb fresh okra or 1 (10 ounce) package frozen okra
3 tomatoes
1 eggplant, about a pound
2 medium green bell peppers
2 medium zucchini
1 large onion
2 tablespoons garlic, finely chopped
1/4 cup olive oil
1/2 cup parsley, fresh, finely chopped
1/4 teaspoon hot red pepper flakes
1/2 teaspoon dried thyme
1 bay leaf, preferably fresh
Salt, to taste

Tomato & Green Olive Salsa

Hot pepper relish is the key ingredient in this zesty salsa.

Ingredients

1 1/4 pounds tomatoes, diced
1 bunch scallions, sliced
1/4 cup sliced green olives
1/4 cup hot pepper relish
1 tablespoon red-wine vinegar
2 teaspoons minced fresh oregano
1/8 teaspoon salt
Freshly ground pepper to taste

Turkish Style Pizza

Italians usually get the credit for inventing pizza, but some people believe that Turkish pide (flatbreads with toppings) may have come first. This recipe is an adaptation of a pizza discovered in a street-side cafe in the Mediterranean coastal city of Antalya.

Ingredients

Cornmeal for dusting
12 ounces Whole-Wheat Pizza Dough (recipe follows) or other prepared dough
1 teaspoon plus 1 tablespoon extra-virgin olive oil, divided
1 1/2 cups grated fontina or Monterey Jack cheese
1 1/2 cups diced tomatoes (2 medium)
1 cup diced sweet onion, such as Vidalia (1 medium)
2 tablespoons minced seeded jalapeno pepper (1 pepper)
2 ounces sliced pastrami, diced (1/2 cup), optional
Freshly ground pepper to taste
1/3 cup fresh flat-leaf parsley leaves, torn
