Paprika and Chorizo Baked Eggs

Takes 45 minutes to make and 10-12 minutes in the oven

Ingredients
1 tbsp olive oil
100g piece chorizo sausage, skinned and roughly chopped
100g thick-cut Serrano ham, roughly chopped
1 red pepper, deseeded and diced
1 medium onion, finely chopped
2 garlic cloves, crushed
2 medium-hot green chillies, such as jalapeño, deseeded and finely chopped
1 tsp ground cumin
2 tsp hot paprika
2 x 400g cans chopped tomatoes
1/2 tsp Tabasco sauce
1 tbsp chopped fresh oregano
150ml fresh vegetable or chicken stock, hot
8 medium eggs
100g Cheddar, coarsely grated (optional)

4 fresh chorizo sausages
5 eggs
400g pack Bacon and Onion Potato Sauté (we used Waitrose)

Green Gazpacho

Takes 35 minutes to make, plus cooling and chilling

Ingredients
500g asparagus, trimmed (or wild asparagus or hop shoots, if possible)
100g stale white rustic bread, diced
4 tbsp extra-virgin olive oil, plus extra to drizzle
3 tbsp sherry vinegar or wine vinegar
1 cucumber, peeled and deseeded
2 garlic cloves
